About Essence of India | Indian Restaurant in Squamish, BC

The story of Essence of India, a popular Indian restaurant in Squamish, begins with our founder and head chef, Chef Don. Originally from the Indian state of Punjab, Chef Don arrived in Vancouver in the mid-1970s, bringing with him a deep passion for authentic Indian cuisine.
After settling in Canada, he completed extensive culinary apprenticeships in Greek, Italian, French, and Indian cooking. This diverse training helped him develop a unique and refined approach to flavour, technique, and presentation.

Throughout his career, Chef Don worked across the Lower Mainland as a chef de partie, sous chef, and head chef, building a strong reputation for excellence in multiple cuisines. His dedication to quality and consistency continues to define the Essence of India experience today.
Before opening the restaurant, Chef Don made several trips back to India to further refine his skills and expand his culinary repertoire. These experiences allowed him to master traditional Indian recipes while incorporating modern influences.
Today, Essence of India is proud to serve authentic Indian food in Squamish, offering a menu inspired by rich Punjabi traditions and a lifelong commitment to culinary excellence.
